Homemade Italian Rice Balls

My homemade, from scratch, rice balls! yummo!I finally got my italian rice ball recipe nearly perfect so i thought i would share with the world!

Ingredient List:

1 lb Arborio Rice

1-1.25 lbs ground beef

3 eggs

Basil

Garlic powder and/or fresh minced garlic

Salt & pepper

Italian Seasoning

Bread Crumbs

Shredded Mozzerella cheese

Grated Parmesan cheese

Ricotta Cheese

Directions:

1. Boil rice over high heat mixed with 1 cup of water. Add water as it evaporates. Constantly stir rice or else it will stick to the pan. Keep adding water, up to about 3 cups, until rice is tender and all water is evaporated. This could take about 20-30 minutes.

2. While rice is cooking, prepare ground beef in frying pan and drain, Place in large bowl. Mix in Rice when done.

3. Add all spices, some bread crumbs, and all cheeses to bowl with the rice and meat mixture.

4. Mix 1 egg into mixture. Stir well. Mixture will be thick and sticky.

5. Mix two eggs into seperate bowl. Pour bread crumbs into second bowl.

6. Make balls out of mixture. Dip in egg bowl and then dip in breadcrumb bowl.

7. Cook in frying pan with about 1/2 inch of olive oil boiling in pan. Fry balls.

8. Serve with warmed Ragu Traditional sauce poured over balls.
