My version of Chili’s Skillet Queso Dip Recipe

We love this dip. So do our friends when they come over! I usually end up making this for football game gatherings at our place on a Sunday afternoon. My favorite chip for it is the hint of lime tortilla ones, and scoops work great too since the dip is kinda heavy with chunks of ground beef. Sorry the pic below sucks. I wasn’t thinking about blogging the recipe at the time.

Plurity's Chili Queso Dip

 

Ingredients:

16 oz of Velvetta

1 cup milk

2 15oz cans of Hormel Chili (no beans)

.75 lb of ground beef

Approximately/To taste:

  • 2 tsp paprika
  • 1/2 tsp cayenne pepper (can replace with red pepper flakes)
  • 1/2 tsp cumin
  • 1 tbsp lime juice
  • 4 tsp chili powder

 

Directions:

Brown ground beef in frying pan. Drain oil.

Melt 16oz of Velvetta cheese on stove in medium to large pot over medium to med-high heat. adjust as needed. you canĀ cube the cheese first to help it melt faster.

As the cheese starts melting, mix in the 2 cans of hormel chili. stir.

Mix in milk and then add in the cooked ground beef. adjust amount of meat added per your preference.

Continue mixing until everything is melted together nicely.

Add in all the seasonings (paprika, cayenne pepper, cumin, chili powder) and lime juice.

Continue stirring until thoroughly heated. Transfer to a bowl and serve with tortilla chips. A side of sour cream and salsa is good too.

Leftovers can be stored in the fridge and heat up in the microwave or on the stove.

Homemade Baked Ziti with Ricotta & Meat Sauce

My homemade baked ziti with meat sauce.

This is the best baked ziti recipe, I’ve been mastering over the past few years. I dont want to brag but its the best baked ziti I’ve ever had, and i dont usually love my cooking that much haha. Very moist, simple, and everyone loves it! (so far atleast!). I make it every year for Christmas and we eat the left overs all week. :)

Ingredients:

1 box of ziti noodles
1 jar of Ragu traditional sauce (45 oz)
1+ lb of ground beef (1 to 1.5 lbs is good, as desired)
1 2lb container of ricotta cheese
1 4 cup bag of shredded mozzarella cheese
Italian bread crumbs
Basil
Italian Seasoning

Preheat oven to 425
Boil pasta
Cook ground beef in frying pan, drain. Add bread crumbs, basil, and italian seasoning to ground beef mixture until desired taste. Add a generous amount of bread crumbs!

Put all ricotta, ground beef mixture, pasta, and majority of sauce into ziti pan. Save some sauce for topping though. Add in some shredded mozzarella cheese too, maybe 1 to 2 cups, as desired. Mix all together very well. Smooth out on top. Cover with a layer of sauce, make sure to put sauce on the edges which keeps it from drying out, sprinkle on some breadcrumbs and basil, cover generously with shredded mozzarella.

Cover very loosely with aluminum foil. Dont want the foil to touch the cheese! Bake on 425 for 45 minutes. Remove foil and bake for another 45 minutes or so. Check on it to make sure cheese does not burn. You will know when its done – cheese will be melted and light golden brown in spots and ziti will be hot through the middle. Cooking times will vary.

Homemade Italian Rice Balls

My homemade, from scratch, rice balls! yummo!I finally got my italian rice ball recipe nearly perfect so i thought i would share with the world!

Ingredient List:

1 lb Arborio Rice

1-1.25 lbs ground beef

3 eggs

Basil

Garlic powder and/or fresh minced garlic

Salt & pepper

Italian Seasoning

Bread Crumbs

Shredded Mozzerella cheese

Grated Parmesan cheese

Ricotta Cheese

Directions:

1. Boil rice over high heat mixed with 1 cup of water. Add water as it evaporates. Constantly stir rice or else it will stick to the pan. Keep adding water, up to about 3 cups, until rice is tender and all water is evaporated. This could take about 20-30 minutes.

2. While rice is cooking, prepare ground beef in frying pan and drain, Place in large bowl. Mix in Rice when done.

3. Add all spices, some bread crumbs, and all cheesesĀ to bowl with the rice and meat mixture.

4. Mix 1 egg into mixture. Stir well. Mixture will be thick and sticky.

5. Mix two eggs into seperate bowl. Pour bread crumbs into second bowl.

6. Make balls out of mixture. Dip in egg bowl and then dip in breadcrumb bowl.

7. Cook in frying pan with about 1/2 inch of olive oil boiling in pan. Fry balls.

8. Serve with warmed Ragu Traditional sauce poured over balls.
